History

The history of Wenneker goes back to as early as 16 February 1693. That was the time when Hendrick Steeman was granted a license to erect two brandy Distilling-kettles. It was the very beginning of the distillery which centuries later - in 1812 – came into the possession of Joannes Wenneker.

It was his great-grandson Franciscus Wenneker, nicknamed Fokke, who due to a lack of successors sold the company in 1903 to a Malter from Schiedam; Johannes Cornelis van der Tuijn.

That was the first Van der Tuijn generation to take control of Wenneker Distilleries. Today, the fourth generation has been active in the organisation and managing Wenneker Distilleries for years. In the meantime, the distillery has become nationally and internationally renowned for its high-quality range of Genevers.

As volume grew steadily and exports increased, Wenneker outgrew its premises in Schiedam. However expansion at that location was not allowed, so the decision was made to move. Roosendaal was chosen from a logistical point of view, as it is located midway between the ports of Rotterdam and Antwerp. And so, in 1967, Wenneker moved into the former KvW tobacco factory in the Badhuisstraat.

Over the years Wenneker has negotiated a number of takeovers. Famous distilleries such as Piersma, Duys, Smeets and most recently Distillery J.J Melchers Wz. Schiedam (with Olifant (Elephant) as their best known label) were bought by Wenneker during the course of the years, as was the wine merchant Dirk Struys & Zoon. The wine division still operates under the name of Dirk Struys, which for years and years has been a guarantee for a complete range of delicious wines of exceptional quality.

Wenneker Distilleries has always moved with the times and still is very much on the move. However, what has not changed and what will never change, is that quality is the priority at all times; craftsmanship is an indispensable ingredient in each of our products. At the same time, an exceptionally high level of service has always been of paramount importance. In this department too you can trust us completely.



Craftsmanship

The profession of distiller requires expert craftsmanship and experience. During its long history Wenneker has gained the necessary expertise, which to this day is still applied in the production process on a daily basis. To this end, Wenneker still uses the original recipe from the 17th century as a basis for the production of its liqueurs. However, the desires of the customer have always been Wenneker's guiding principle and therefore the flavour of our products has evolved in accordance with the preferences of the consumer. Over the years, packaging also, has tended to follow current trends, while the design of the bottle has always moved with the times, whilst retaining its high quality image.

But why is it that the art of distilling requires such craftsmanship and what exactly does distilling mean?

According to the Van Dale Dutch dictionary the definition is as follows:

dis·til·l (transitive verb)

1- Purifying or separating through evaporation and subsequent condensation

2- Preparing (spirits) from alcoholic substances => distill

We will discuss the distillation process later. Before this process can be started, the ingredients must be selected with the utmost care. Herbs, peelings, stones, seeds, flower parts, bark and plant roots give the end product its characteristic flavour. They come from all over the world: berries from Italy, cherries from Yugoslavia, citrus fruits from the Mediterranean and bananas from Indonesia…

However, not all these flavouring ingredients are suitable for distillation. The essential material for the distilled spirit can also be obtained by extracting or percolating. Below you will find an explanation of the various methods:



Distillation

Distilling takes place in large copper brew-kettles. Copper does not change the flavour during distillation, but does influence the process. Depending on the desired spirit, a linen bag containing a sophisticated herb bouquet is placed in the distillation kettle, after which the kettle is filled with corn alcohol or malt spirit. In the case of Corn wine distillate for instance, only malt spirit is used.

The herbs are soaked in the alcohol for a number of days. As a result, the alcohol absorbs the flavours and aroma of the herbs. Subsequently, the kettle is heated up. Since the boiling point of alcohol is 78°C and that of water 100°C, the different vapours are separated during the heating process. The distillate which is obtained, is carefully separated by the drinks master into a first, middle and final cut. Only the middle cut is suitable and this requires craftsmanship. Determining the start and the middle cut requires the necessary experience and expertise. This is done organoleptically, so it is all about the art of separating the liquor at the right moment by means of flavour and aroma. If the first or final cuts are allowed to mix with the middle cut, the distillation process is ruined.



Maceration or extraction

A selection of herbs is subjected to an extraction process in a maceration vat. The process is very much like making tea; the aromatic substances are extracted from the raw material, as they are soaked in 60% alcohol for a certain period of time. The extract contains both volatile and non-volatile elements; it is therefore carefully filtered and depending on the type of extract it will be distilled prior to it being used.

When working with fruits a lower percentage of alcohol is used, otherwise the pores in the skins of the fruit would close and thus not exude their flavours.



Percolation

Percolation is similar to maceration; however, during this process the heated mix of alcohol and water seeps through the herbs. This method is very much like making coffee.

The ultimate result of the above methods is used to flavour the liquid. Usually Cologne pots are used to store the strong semi-finished product. These pots are not hermetically sealed, to ensure that the contents can breathe. The stone material of the pots does not affect the flavour and ensures that the distillate or extract remains pure.



Blending

The distillate, the extract or sometimes even a combination of the two are carefully blended with the other ingredients to form the end product in accordance with the specific recipe. The master blender keeps a strict watch to ensure that the quality of the liquid is always consistent.

Subsequently, the finished product is transferred into larger casks or tanks for a period of rest. In jargon this is also called the marriage.


Ageing

A number of products, such as Old Genever for instance, are aged in oak wood casks. This is done for a specified period of time, in casks with a specific capacity.

The air, which enters through the pores of the casks, interacting with the wood gives the product a specific flavour and colour. This colour and flavour become increasingly rich and intense as the ageing process continues. The age and the size of the casks are the determining factors in this process. The effect on the product differs according to the type of cask used. Therefore we never take a sample from a single cask prior to bottling, but a sampling from various casks is carefully blended together. Again, the expertise of the master blender is indispensable in this respect. He ensures that the end product is of the highest and most consistent quality.



Bottling

Prior to bottling the end product's flavour is repeatedly checked. The alcohol percentage too is carefully watched before and during bottling as is the liquid content of the bottle. The tank in which the finished product is stored is connected to the production line via long pipes. For the Wenneker products 6 different bottling lines are used depending on the type of bottle, the label and the capacity of the bottle to be bottled. As such, Wenneker Very Old Corn Wine is still filled by hand in the authentic stone bottle, whilst the ultramodern filling machine can fill other bottles at the rate of 12,000 bottles per hour.



Storage and delivery

Both the finished product in the bottle and our range of wines are stored in hypermodern warehouses from where our products can be delivered throughout the Netherlands within 48 hours.





CITRUS

WENNEKER BLUE CURAÇAO

This is a refreshing liqueur on the basis of our home distilled curaçao distillate. Curaçao apples (look like oranges) and citrus fruits can be clearly recognised in the flavour.

Because of the bright blue colour, Blue Curaçao is a popular and indispensable ingredient for many cocktails. However, straight, on-the-rocks or in a long-drink with orange juice or lemonade Blue Curaçao is also exceptionally tasteful.

WENNEKER CURAÇAO ORANGE

Curaçao Orange is a particularly pleasant and fruity liqueur.

Sun ripened Curaçao apples and oranges are the main flavour enhancers for the homebrewed distillates of the authentic family recipe for Wenneker Curaçao Orange.

Whether straight or on the rocks, this liqueur is a successful aperitif or digestive. Curaçao Orange is also ideal for use in cocktails.

WENNEKER LIMONCELLO

This fabulous variant of liqueur, which owes its taste to fresh Italian lemons, is especially recommended as a digestive. The Liqueur has a distinct fresh taste, not too sweet and certainly not too sour. Wenneker Limoncello is at its best when served cool. Besides the pure consumption, Limoncello is also perfectly fit for the use in desserts and of course cocktails.

WENNEKER MANDARIN

After opening a bottle of Wenneker Mandarin, the aroma will pleasantly surprise you. You will recognise its characteristic, refreshing aroma at once. This delectable liqueur derives its taste from the most delicious sun-ripened Moroccan mandarins. Wenneker Mandarin is neither overly sweet nor sharp; precisely what you would expect from a quality mandarin. The alcohol percentage of 20% ensures that the flavour achieves its full potential. WENNEKER TRIPLE SEC

Wenneker Triple Sec is based on a cherished age-old family recipe with a base of orange distillate and a very spicy Curaçao distillate. This Curaçao distillate contains no fewer than 3 types of Curaçao apple. Cinchona and Angostura bark are the main flavourings for this distillate.

The ethereal oils included in the distillate can cause Triple Sec to “cloud over”, i.e. it becomes turbid when stored too cool. This will disappear however, when the liqueur is warmed up again.

The Triple Sec is one of the most popular flavours in the liqueur family. After all, it is an essential element in the cocktail bar. The most famous cocktail prepared with Triple Sec is the Margarita (Triple Sec with Tequila). Triple Sec is also used in cakes, sweets, the kitchen and confectionery.

BERRIES

WENNEKER BLACKBERRY

As blackberries are only briefly in season and prone to spoiling, the blackberry extract that forms the basis of this fruity liqueur is harvested in August. The strong concentrate is processed immediately and Wenneker Blackberry is the result. A delicious liqueur containing 20% alcohol. Exceptionally suitable for use in cocktails and long drinks.

Blueberry

WENNEKER BLUEBERRY

This fruity liqueur is highly recommended. Fresh blueberries are used in an alcohol-based extraction process to give this liqueur its fruity flavour.

WENNEKER CRÈME DE CASSIS

Concentrated black currant juice and a delicious currant extract form the base of this heavy dark red liqueur. This extremely sweet and concentrated black currant liqueur is the important ingredient which gives the famous “Kir Royal” its flavour. In addition, it is of course a fantastic element in many other cocktails and long-drinks.

WENNEKER RASPBERRY

This is one of the most fruity liqueurs of the whole range. The delightful, full taste of sun-riped raspberries provides this Liqueur its extraordinary summer-character. As the raspberry is only available from the end of July till mid August, the extract is made in the summer-season. This extract is the base for Wenneker Raspberry. It goes without saying that this Liqueur can be drunk pure, but it can also be poured over custard, yogurt, curd and ice-cream. And what would you think of a milkshake with Wenneker Raspberry?

WENNEKER SLOE GIN

Only the best, fresh berries are used for Wenneker Sloe Gin. They are Gin-extracted and the extract thus obtained, together with a beautiful gin distillate, forms the basis for this special liqueur.

Many cocktails owe their taste to this delicious liqueur, which is also very tasty when drunk straight. When Sloe Gin is used in a long-drink, add some tonic or sparkling water to create a beautiful pink head.

One of the most popular liqueurs in our range is the Cherry Brandy. This liqueur is known for its distinct cherry flavour from concentrated Marasca cherry juice. The fruity distillate which is added gives a surprising finesse.

The natural Cherry Brandy flavours are enjoyed best when drunk straight or with ice. WENNEKER AMARETTO

The Cream liqueur Wenneker offers you is a ready to drink cocktail: Wenneker Piña Colada. Born in the Caribbean Piña Colada became one of the world's most famous cocktails. Piña Colada is a blend of coconut, pineapple juice, rum and cream.

The popularity of Piña Colada has led to one of the few cocktails available in a bottle that is ready to drink. Easy isn't it?

GENEVER SLOE GINS ((Dutch Gin))

Goblet Young Grain Geneva (Dutch Gin).

When distilling this unsurpassed soft Grain Geneva, century-old traditions and workmanship work harmoniously together with distilling techniques according to traditional methods.

Alcohol from Italian juniper berries and herbs, including liquorice, absinthe, coriander and fennel seed is distilled twice in special copper distilling vessels.

Goblet Young Grain Geneva is 100% Dutch Gin. This Dutch Gin can be characterised as distinctly smooth with a pronounced juniper berry flavour.

Olifant Young Grain Geneva

The recipe for Olifant Young Dutch Geneva has remained unchanged through the years, and the original still continues to be in use even today. The unique Olifant still makes a vital contribution to the distillate and hence the taste of the end product.

Craftsmanship and the preparation method are therefore crucial components of this traditionally produced geneva, with the main contributions to the flavour coming from "moutwijn" (malted barley, corn and rye) and the unique Olifant distillate.

In December 2006 the bottle has been restyled. But true to tradition, Olifant Geneva is still packaged in the stout four-square bottle. A more standard round bottle is however also available for use in the hotel, restaurant and catering trades.

Oude Proever

Wenneker Oude Proever is a true Dutch quality product. The constant, sublime flavour of this Matured Geneva is guaranteed through a tradition of more than three centuries of distilling, craftsmanship and a feeling for quality.

Carefully selected fine grains, malt spirit and juniper berries are the main ingredients for this cherished family recipe. The wide range of spices in the main distillate for Oude Proever is soaked in a special pot still for at least 3 days.

The final distillate is mixed with the Malt spirit, grain alcohol and water, after which it will undergo a maturing process on American oak casks for several years. This maturing process ensures the fine, extra smooth flavour of Oude Proever.

Elderflower Dry Gin

“A classic dry gin with a refreshing flourish of elderflower” Wenneker Distilleries have been known for their high quality Genevers (Dutch Gin). New to the range is Wenneker Elderflower Dry Gin; created from 6 distillates; Juniper berries, Lime-tree blossom, Lemon, Orange, Coriander and Elderflower.

Apart from pure water and the craftsman's passion nothing else is added. The result is a fresh, clear gin with the delicate taste of Elderflowers. Drink with tonic, as a Martini or in your favourite cocktail.

Tasting notes:
Nose: classic juniper and coriander, with a touch of zesty citrus and a flourish of elderflower.

Taste: this is a full flavoured gin with the rich mouthfeel of elderflower. Tones of coriander and juniper load onto a burst of citrus, followed by the emerging floral notes, a touch more citrus, a hint of vanilla and then the dry, fragrant elderflower.

Undeniably, Gin, which is very much English, finds its roots in the Netherlands. (Dutch)Gin was taken to England in the 17th century. The English were so enthusiastic about the flavour that they decided to make their own “Dutch Geneva”. “Gin” as such is a corruption of the word “Geneva”.

The name “Gin” is not an indication of origin and therefore it may be distilled anywhere. Various types of Gin can be distinguished, the following of which are the most famous:
- Dry Gin: a strongly flavoured distillate, plain in colour and unsweetened as indicated by the name.
- London Dry Gin: this Gin is known to be the standard type of Gin with a standard flavour.
- Old Tom Gin: is slightly sweeter in flavour than London Dry Gin.
- Plymouth Dry Gin: is slightly heavier in flavour than London Dry Gin.

Gin is often used in Long Drinks and Cocktails of which Gin & Tonic is the most popular.
